DESCRIPTION:
Valderrama is a producer of high quality extra virgin olive oils, producing its own oils in its own farms and mills. Valderrama produces 5 different types of monovarietal oils. This fact places us on the map of the best high quality producers. The basis of all our oils are single-varietal oils, extracted cold at 19ºC and in less than an hour, to guarantee the highest quality, which is reflected in their aroma, freshness and delicacy on the palate.
Innovation is highly present in Valderrama’s daily work, with launches of new oils and flavours that surprise the best chefs in the world and domestic consumers. The wide range of oils stands out.
One fact to highlight is Valderrama’s commitment to the environment and sustainability, being pioneers in the use of Ozone (O3) in the recycling of water at its farms and the application of technologies, such as monitoring stations connected via satellite, which allow monitoring of the needs of the olive trees and the field to make a rational use of water and resources.

• Ocal: the most delicate variety known, its aroma of freshly cut grass and smoothness stand out. Ideal for vacuum cooking, sauces, white fish, purees, pastries, sushi and any delicate dish.
• Arbequina. Top seller due to its attractive fruity flavour such as green apple and banana peel, delicate and adaptable to most dishes.
• Hojiblanca: Combines the strength of a green and spicy oil, where the most unique tasting note is the aroma of the tomato plant. It can be used in any type of dish, standing out in meat, salads, gazpacho and salad dressings with tomato.
• Picudo: A variety renowned among the great chefs, its buttery texture and its flavours such as green almonds, artichoke and herbs is ideal for all dishes, highlighting the fish and the ease of emulsifying with sauces of all kinds, in fish and pasta.
• Cornicabra: A very characteristic variety from the centre of the peninsula and the region of Castilla-La Mancha, which stands out for its strong and bitter flavour. Highly valued for game cooking and all kinds of meats. Its uniqueness makes it a perfect oil to be consumed raw and at high temperatures (frying or stews)
2. Colección de Sabores Cercanos (Local Flavours Collection): innovation and novelty.
• Al natural limón (With Natural Lemon): Obtained by macerating the rind of natural lemon in arbequina oil. Ideal for seasoning fish or seafood that needs a citric but not sweet touch, whether grilled or baked. Also used in sauces and dressings.
• Al Ajo Negro (With Black Garlic): By combining black garlic with arbequina we obtain a surprising oil with a garlic and liquorice flavour. Ideal for meat stews such as oxtail or game. Also used for vegetables with a bitter taste, asparagus, endives, turnip greens and all kinds of fish. Also in desserts with chocolate.
• A la Guindilla Fresca (With Fresh Chilli Peppers): Obtained by the delicate and slow maceration of fresh chilli peppers in arbequina oil. Perfect for spicy finishes in vegetable or legume stews. Used in soups, pastas, rice dishes and on toast. In Italian dishes it is ideal.
• Al Pimentón y Ajo Frito (With Paprika and Fried Garlic): Dressing with a traditional aroma and flavour of Spanish cuisine, such as fried garlic and paprika. Perfect for seasoning fish, poultry and sautéed vegetables. For all types of rice dishes, mashed potatoes. Ideal with squid or octopus. Lends a Spanish touch to food from other continents.

• Ahumado Valderrama (Valderrama Smoked). From our Arbequina oil we obtain an oil with a smoky flavour, in a natural way, without chemicals and with oak and beech wood. This is an ideal condiment to give a grill flavour touch to simple dishes at home or haute cuisine elaborations.
• Valderrama de Trufa Negra (Valderrama With Black Truffle). Based on the Ocal variety and using 100% natural, chemical-free processes, we obtain an oil unlike any other. We use the Tuber Melanosporum variety.
• Valderrama de Trufa Blanca (Valderrama With White Truffle). Based on the Ocal variety and using 100% natural, chemical-free processes, we obtain an oil unlike any other. We use the Tuber Magnatum Pico variety.
